Yummy and healthy. Instead of fatty oils you use ground carrots and pumpkin. Veggies and dessert are always a great mix in my opinion. Thanks to my friend Susie for this lowfat dessert recipe!
1 cup grated carrots (I chop them super small in my blender)
10-15 oz pumpkin
1/3 cup sugar
1/3 cup brown sugar
1 cup flour (vs 1 1/8 cup flour)
2 teaspoons allspice or cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/2 teaspoon baking soda
1/4 teaspoon table salt, butter and vanilla if I taste it and it needs it
375○ for 10-12 minutes depending on the size
