Ingredients for Blueberry Buckle
1/4 Cup Sugar
1/4 stick Butter (2 Tbsp or 1 oz)
3 Eggs
1/4 Cup Milk
6 Cups Flour
2 Tbsp Baking Powder
1/4 tsp salt
3 to 4 Cups Blueberries, fresh or frozen
Ingredients for Streusal topping
1 stick softened butter (It is easiest to work with when cut into small chunks)
1 Cup White Sugar (Brown Sugar is delicious too)
1/4 Cup Oatmeal
1 tsp Cinnamon
In a large bowl cream sugar and 1/4 sticks of butter, than add eggs and milk. In another bowl, combine flour, baking soda, and salt. Gently stir into egg mixture. Spread in greased 12x16 inch pan or two 9x13 pans. Spread blueberries over batter. combine the topping ingredients. Sprinkle the topping over berries and bake at 350○ for 35 to 45 minutes, or until a cake tester comes out clean.
