FRESH TUNA BURGERS

This is a great way to eat a burger without the guilt. I am a huge fan of TUNA!!! If you want to use canned tuna, just add a little mayo and don't overcook. If you go with the fresh, don't worry about cooking it all the way through. Just cook the patties until they are golden brown, even if there is still pink in the middle. I promise, it is okay. Fresh tuna is best rare. This recipe says to remove the skin from the fresh tuna, but usually when you buy a tuna steak the skin is already removed.

Ingredients Yield: 4

1 lb. fresh tuna
1 tbsp. minced dill
1 tsp. capers, rinsed and chopped
Salt and pepper to taste
1 1/2 tbsp. olive oil

1. Remove skin from tuna; coarsely chop tuna with a knife or in the food processor. Using a fork, gently blend it with dill, capers, salt and pepper in a mixing bowl. Shape into 4 patties. (If using canned tuna you may not need to chop it all)

2. Heat oil in a large skillet over medium heat. Add patties and cook until golden brown, about 2 minutes on each side. Makes 4 servings.
